So, my latest food conquest in Boston was Roxy’s Grilled Cheese – a food truck serving up delicious grilled cheese options. On the menu last evening during my visit to their parking spot in Copley Square were “The Green Muenster”, a delicious combo of Muenster cheese, applewood bacon and homemade guacamole, “The Mighty Rib”, Fontina, braised short ribs and caramelized onion, and a special including duck confit! I opted for the “Rookie”, which seemed fitting for my first visit to the increasingly popular mobile mecca! The Rookie is made with Vermont Cheddar and tomato – simple, yet delicious and the perfect comfort food on a rainy Boston night. I walked away from the truck with a foil-wrapped hot and cheesy delight, grilled to the perfect golden brown buttery finish. This may have been my first stop at Roxy’s, but it won’t be my last – and I plan expand my visits to include other Boston food trucks. There are many, enough in fact for a deliciously self-guided food truck tour over the course of the fall. Stay tuned – I’ll keep you posted on my tasty finds!
